Chocolate Cupcakes with Vanilla Icing

How to Make Chocolate Cupcakes with Vanilla Icing



Ingredients
For the cupcakes:Makes 12 cupcakes

  • ¾ cup unsweetened cocoa powder
  • ¾ cup flour
  • ½ t. baking powder
  • ¼ t. salt
  • 165g (1½ sticks) unsalted butter, room temperature
  • 1 cup sugar
  • 3 eggs
  • 1 t. vanilla extract
  • ½ cup sour cream

For the Easy White Icing:

  • 165g  (1½ sticks) unsalted butter, softened
  • 450g (1 pound) icing sugar
  • 1 to 2 T. milk (optional)

Method
To make the cupcakes:

  1. Preheat oven to 180°C (350F). Line 12-cup cupcake pan with cupcake cases.
  2. Sift the cocoa, flour, baking powder and salt together.
  3. In another bowl cream the butter and sugar. Add eggs, beating well after each one, then the vanilla.
  4. Put the mixer on low speed and add half of the flour mixture. Add the sour cream and then the other half of the flour mixture.
  5. Fill the cupcake pan ¾ of the way full. Bake until a toothpick inserted in centres comes out clean, 20 to 25 minutes.
  6. Allow to cool in the pan for 5 minutes and then transfer to a wire rack to cool completely.

To make the Easy White Icing:

  1. In a mixing bowl, cream butter until smooth. Add the icing sugar slowly and beat until smooth. Add milk if the icing is too thick.
  2. Pipe or spread the icing onto the cooled cupcakes. Decorate as you like.

How to Make a Cupcake Cone

1. Make the batter for your cupcakes. 

2. Unwrap the ice cream cones slowly and carefully.

3.Pick up and fill each cone. Replace each cone in its muffin cup.

Leave a little room at the top for expansion (about ½ to ¾ inch).

Be careful not to overfill or you will have a mess.

4. Bake according to cake batter instructions. Bake for the same length of time you would bake regular cupcakes.

5. Prepare your icing. Place sprinkles in a small bowl.

6. Remove cupcakes from oven and allow them to cool. Frost the cupcakes using a knife or spatula.

7. Dip the top of the cupcake in sprinkles.

8. Place each cupcake back into muffin tin, or place in a serving dish with sides. 

9. Serve and enjoy.
